Gina Coleman from the Good Neighbor Day Festival made her winning recipe for White Chicken Chili. Gina was the winnner of the Chili Cook-off competition at the 2017 Good Neighbor Day Festival. Come celebrate the importance of being a good neighbor and making a difference right where you live at Davidson County's 2019 Good Neighbor Day Festival Saturday, September 28 from 10am-3pm at the Southeast Community Center Park, 5260 Hickory Hollow Parkway (the old Hickory Hollow Mall / Global Mall). GINA'S WHITE CHICKEN CHILI
8 pieces of boneless chicken breast cut into 1/2-inch cubes or Rotisserie Chicken
6 cans navy beans, undrained
1 white onion, diced
1 bell pepper, diced
1/4 stick butter
1 chicken bouillon cube
1 teaspoon of chili powder
1 teaspoon of ground cumin
1 teaspoon of garlic
2 dashes garlic powder
2 dashes onion powder
2 dashes of cayenne pepper
Alternative: White chicken chili seasoning
Three elements of preparation:
(1) Chicken: Cook chicken breast until chicken is cooked through or is no longer pink. Shred chicken and place in bowl. Save the broth.
(2) Vegetables: Heat butter in large skillet and saute chopped onion and bell pepper until tender. Add shredded chicken and broth to sauteed onions and bell peppers and let simmer 10 minutes.
(3) Navy Beans: Cook the canned navy beans until tender.
*Add chili seasoning, cumin, minced garlic, garlic powder, onion powder, and cayenne pepper to Navy Beans -- OR white chicken chili seasonings (2 packs).
*Add dashes of all-purpose flour if soup texture is thin. It will thicken the soup. Season to your flavor and taste.
Combine all: Shredded chicken with sauteed onions and vegetables and seasonings with navy beans. Let simmer 30 minutes.
