Two Easy Weeknight Dinner Recipes

Ann Cox Eastes from Kroger made made two easy weeknight dinners - Chicken with Lemon & Capers and Turkey, Bacon, Feta, Edamame and Strawberry Salad. (see recipes below) For more recipes, visit www.kroger.com/recipes

BAKED LEMON AND CAPER CHICKEN BREASTS

¼ c Kroger olive oil

Juice of 2 medium lemons

3 T Private Selection capers, with brine

1 clove garlic, minced

2 t kosher salt

2 t freshly ground pepper

1 lb Simple Truth chicken breast cutlets or chicken tenders

Preheat oven to 350F. In a medium bowl combine the oil, lemon juice, capers, garlic, salt and pepper. Whisk to combine. Place the chicken pieces in a small baking dish. Pour the marinade over the chicken. Bake uncovered for 35-40 minutes. Yield: 4 servings **Chicken cutlets are thin and may cook faster than chicken tenders.

TURKEY, BACON, FETA, EDAMAME AND STRAWBERRY SALAD

6 c Simple Truth Organic mixed greens

1 c diced, cooked turkey breast

1 c Simple Truth shelled edamame

1 c sliced strawberries

¼ c chopped, cooked bacon

¼ c Private Selection feta cheese

¼ c walnuts

¼ c Simple Truth chopped mint

3 T Kroger balsamic vinegar

3 T Kroger olive oil

½ t salt

½ t ground black pepper

Place mixed greens, turkey breast, edamame, strawberries, bacon, feta, walnuts, mint, vinegar, oil, salt and pepper in a large bowl. Toss to combine and serve immediately. Yield: 4-6 servings
