ROASTED SWEET POTATOES
INGREDIENTS
4 cups chopped peeled sweet potato
3 Tablespoons olive oil
1 Tablespoon balsamic vinegar, or more to taste
2 Tablespoons of molasses (or honey if you prefer)
1 tsp of Tony Cachere’s Cajun seasoning (omit if you’re wanting to use these sweet potatoes in desserts like sweet potato pie or muffins).
1 tsp of Thyme (dried or fresh)
1 tsp of nutmeg
1 tsp of cinnamon
Salt and pepper to taste (go light on the salt as Tony Cachere’s has plenty of salt)
DIRECTIONS:
- Preheat oven to 400 degrees F
- Cover a baking sheet with foil. Cover with olive oil.
- In a small bowl mix molasses, balsamic vinegar, and spices.
- Put the cubed sweet potatoes in a large bowl and coat them with the molasses mixture.
- Place sweet potatoes on the sheet pan and make sure none are touching so they roast and don’t steam.
- Roast sweet potato mixture in preheated oven, turning frequently, until the vegetables are soft and golden brown, 25-30 minutes.
Uses for sweet potatoes:
Use the roasted sweet potatoes as a side dish or add to a salad. You can also turn these sweet potatoes into sweet potato puree (see recipe below).
I also use them in my Sweet Potato Cream cheese bread and my sweet potato sugar cookies (see recipe below).
SWEET POTATO PUREE
INGREDIENTS
3 lbs sweet potatoes, already roasted or boiled until tender (You can also use canned sweet potatoes but freshly roasted is best!)
1/2 cup heavy whipping cream
1 tsp of cinnamon
1 tsp of nutmeg
1/4 cup of brown sugar
Kosher salt and freshly ground black pepper
12 Tbsp (1 1/2 sticks) unsalted butter, at room temperature
DIRECTIONS:
Transfer the warm sweet potatoes to the bowl of an electric mixer fitted with the paddle attachment. With the mixer on low, slowly add the half-and-half, and spices. With the mixer still on low, add the butter, 1 tablespoon at a time, until incorporated. Taste for seasonings and mix until smooth. Serve hot.
