The Listening Room Cafe's Dry Rub Chicken Wings

1 ¾ c white sugar

1 ¾ c paprika

½ c chili powder

½ c black pepper

½ c salt

¼ c cumin

⅓ c onion powder

⅓  c garlic powder

Party Pack of chicken wings (allow 2-3 wings per person)

Combine all ingredients in a large bowl. Once combined, pass mixture through mesh sieve several times to ensure spices have no lumps and are well combined.

Toss chicken wings in a small amount of the dry rub, adding until wings are coated. (This recipe makes 6 ½ cups, use only enough to coat your wings and save the rest to use later!),

At The Listening Room Cafe, wings are cooked in a smoker for 1 hour, then cooled in the refrigerator until ready to serve. Flash fry wings for several minutes in hot oil, then serve immediately.

At home, bake wings for 45-60 minutes in a 350 degree oven (follow directions on the Party Pack) then broil on high for 10 minutes on each side.
