TAZIKI'S QUINOA SALAD
INGREDIENTS:
3 c cooked quinoa
1 medium cucumber, sliced in half lengthwise and cut into 3-inch pieces
1 green pepper, diced
1/4 c of red onion, finely chopped
2 medium tomatoes, diced
1 TBSP capers
2 TBSP oregano
4 TBSP Greek seasoning
2 TBSP balsamic vinegar
1/2 c feta, crumbled
DIRECTIONS:
Boil quinoa as directed.
While quinoa is boiling prepare salad and spices in a bowl.
Mix salad with balsamic vinegar.
In a separate bowl, plate salad and quinoa .
Crumbled feta on top of the salad and mix in the quinoa with all the other ingredients.
Place your grilled protein of choice on top (protein suggestions include salmon, shrimp or chicken).
Serve it with fresh or baked pita.
