Bourbon Meatloaf from MacHenry's Meat & Three

Four Roses Bourbon Meatloaf

BBQ Sauce- (makes about a 1 qt and will last a while)

1 cup onion

1/4 cup minced garlic

3/4 Four Roses cup bourbon + extra for sipping

2 cups ketchup

1/4 cup worcestershire

3 tsp molasses

pinch salt and pepper

1/2 cup brown sugar

1 tsp tabasco

pinch garlic powder

pinch onion powder

pinch of smoked paprika

1 tsp of liquid smoke

1 tsp of olive oil

Directions-

finely chop onion & garlic

add olive oil to medium high heat pot & saute onion until it begins to caramelize

add garlic and cook for 5 minutes

add Four Roses Bourbon and let reduce by half on medium high heat approx 10 minutes

add remaining ingredients and let simmer for 15 minutes on medium heat while stirring occasionally

remove from heat / cool / enjoy on everything

Meatloaf 

1 lb ground beef

2 eggs

3/4 cup breadcrumbs (panko is what we use)

1TBSP worcestershire

2TBSP Bourbon BBQ Sauce

1/8 cup fine chopped onions

1/8 cup fine chopped red bell peppers

pinch salt & pepper

1/8 cup garlic powder

Directions

In a mixing bowl combine all the ingredients and mix well. This can be done by hand or with a stand mixer using the paddle attachment

Grease a bread baking pan and pack the meatloaf mixture into the pan about 3/4 full.

Pack down evenly to ensure even cooking.

cover with foil and Bake on 375 for approx 1 hour or until internal temperature reaches 165. Pull out of the oven and let rest for 10 minutes

Top it off with some bbq sauce and enjoy.
