BLACK BEAN SOUP WITH CHICKEN
15 ounce can of black beans
1 1/2 cups of salsa
1/2 cup fresh cilantro
2 teaspoons ground cumin
1/8 teaspoon garlic powder
1 pound of precooked chicken (from slow cooker or rotisserie)
Combine all ingredients and bring to a simmer over medium heat.
Serve with some of the cilantro sprinkled on top.
GLUTEN FREE TORTILLA CHIPS
6 corn tortillas
Vegetable Spray (extra-virgin olive, canola or corn oil)
Salt to taste
2 teaspoons ground cumin
Preheat the oven to 375 degrees.
Cut the corn tortillas into triangles
Spray the vegetable oil on your baking sheet.
Place the cut triangles on the baking sheet, spray the chips lightly with oil and sprinkle the cumin and salt evenly over the chips.
Bake for 15 minutes or until golden and crisp.
