Pie Town Tacos Pickled Veggies

Yields: 1 quart

INGREDIENTS:

1 Tbs olive oil
2 cloves garlic
1 carrot, sliced
3 radish, sliced
1/2 yellow onion, julienne
3 jalapeno
2/3 cup vinegar
2/3 cup water
1 Tbs kosher salt
1 tsp Mexican Oregano
2 tsp sugar
1/4 bunch green onion, cut 1” strips

DIRECTIONS:

Heat olive oil over medium heat. Sauté garlic until just brown. Add carrots, radish, onion, and jalapenos. Sauté veggies until they begin to soften and set aside. In a separate pot bring vinegar, water and spices to a boil and pour mixture over the top of all vegetables. As the mixture cools, the veggies will pickle and finish cooking to proper doneness.
