SALMON SALAD
INGREDIENTS
1/2 lb cold baked salmon
Half jar of pimentos
1/2 T dill leaves
1/3 c green onion, chopped
1/2 cup mayo
1/3 cup of heavy cream
3/4 t lemon juice
3/4 t Worcestershire
3/4 t Demos’ Seasoned Salt
3/4 t Peter D’s Cajun seasoning
1/2 T sugar
1/4 t cayenne
DIRECTIONS
In a 2 Cup Measurer add: Mayo, heavy cream, Lemon Juice and Worcestershire.
In a small bowl mix the following: Demos’ Seasoned Salt, Peter D’s Cajun seasoning, Sugar and Cayenne. Combine contents of the 2 cup measurer into bowl. Add Pimentos, Dill leaves and Green Onion. Mix ingredients together. Add Salmon and mix with spoon.
PICKLED RED ONION
2 red onions, sliced
2 c Red Wine vinegar
¾ c sugar
Put red onions in a Mason Jar. Heat the Vinegar to slow boil. Add sugar and mix until dissolved. Then add to Mason Jar of sliced onions. Sit overnight or longer.
