POMEGRANATE PICO CHICKEN BOWLS
1 lb Kroger Simple Truth thinly sliced natural chicken breast cutlets
1 t salt
½ t garlic powder
½ t ground cumin
½ t ground black pepper
1 T Simple Truth avocado oil
1 (12-oz) pkg Kroger frozen riced cauliflower
1 ½ c pico de gallo
½ c pomegranate seeds
2 avocados, sliced
Lime wedges for garnish
Season chicken cutlets with salt, garlic, cumin and pepper. Heat oil in a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes, turning once until internal temperature reaches 165F. Cook cauliflower rice in microwave according to package directions. In a small bowl combine pico de gallo and pomegranate seeds. Cut chicken into strips. Arrange chicken, pomegranate-pico de gallo, avocado slices over cauliflower rice. Garnish with lime wedges. Yield: 4 servings
BLUEBERRY AND APPLE SALAD
5-6 ounce pkg mixed greens
¾-1 c chopped apple
½ c blueberries
1/3 c dried cranberries
¼ c roasted pistachios
2-3 T sunflower seeds
2-3 T shredded Parmesan cheese
Balsamic vinaigrette or raspberry walnut vinaigrette dressing
Combine greens, apple, blueberries, cranberries, pistachios and sunflower seeds in a bowl and toss to mix. Top with Parmesan cheese and toss with dressing. Yield: 2 servings.
