Miss Daisy's Curried Shrimp Salad With Avocado Salad Dressing

Daisy King from Miss Daisy's Kitchen made Curried Shrimp Salad with Avocado Salad Dressing. Curried Shrimp Salad

1/4 c chopped onions
 1 T apple cider vinegar
 2 T vegetable oil
1/2 t curry powder 
1 1/2 c cooked rice
1 c diced celery
1/4 c diced green pepper
2 1/2 c cooked shrimp
1/3 c mayonnaise
Salad Greens 

Assemble ingredients and utensils. Combine onion, vinegar, oil and curry powder in a bowl. Stir in rice.
Chill at least 2 hours to blend flavors. Just before serving, add celery, green pepper and shrimp. Add mayonnaise and mix lightly. Serve on Salad Greens.   Yield:  6 servings 

Avocado Salad Dressing

2  ripe avocados
Juice of 1 lemon
1 T mayonnaise
1 t grated onion
Salt and pepper to taste
3/4 c vegetable oil
1/4 c white wine vinegar

Assemble ingredients and utensils . In a bowl, mash avocados until smooth. Add lemon juice, mayonnaise, onion, salt and pepper. Mix thoroughly. In a separate bowl, blend oil with white wine vinegar.  Stir into the avocado mixture. Serve over peeled and sliced tomatoes, or toss with a green salad or enjoy with the Curried Shrimp Salad.  Yield: 1 1/2 cups approximately
