(see recipe below) The Iroquois Steeplechase had to be canceled this year because of COVID 19, but on June 27th, folks all over town will host virtual Steeplechase parties at home! That night, NewsChannel 5 will broadcast an hour-long Iroquois Steeplechase special at 6pm. EASY TIRAMISU
1 ½ cups heavy whipping cream
8 oz container mascarpone cheese, room temperature
1/3 cup sugar
1 tsp vanilla
1 ½ cups cold espresso
3 Tbs Gentleman Jack Tennessee Whiskey
7 oz pkg Lady Fingers (Biscotti Savoiardi brand found in cookie aisle of
grocery)
Cocoa powder for dusting on top
Whip cream in a mixing bowl until soft peaks form. Slowly add sugar & vanilla and continue beating until stiff peaks. Add mascarpone cheese and mix just until combined. Set aside.
Stir together coffee & whiskey in a shallow bowl. Dip the lady fingers in the liquid (don’t soak them---just quickly dip them on both sides to get them wet) and lay in a single layer on the bottom of an 8x8” pan.
Smooth half of the mascarpone mixture over the top. Add another layer of dipped lady fingers. Smooth remaining mascarpone cream over the top.
Dust cocoa powder generously over the top with a fine mesh strainer or sifter. Refrigerate for at least 3-4 hours or up to overnight before serving. Keeps for several days in refrigerator.
To freeze for future use, make according to directions, but do not dust with the cocoa. Cover tightly with plastic wrap and them aluminum foil and freeze for up to 3 months. Thaw in refrigerator overnight and dust with cocoa before serving.
