Soft-Baked Sprinkle Sugar Cookies
1/2 cup (1 stick) unsalted butter, at room temperature
3/4 cup sugar
1 large egg, at room temperature
1 tsp. vanilla extract
1/4 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cream of tartar
1 1/2 cups all-purpose flour
1/2 cup sprinkles, plus more for sprinkle on top before baking
Preheat oven to 350 degrees.
In a large bowl using a hand-held mixer or stand mixer with the whisk attachment, cream the butter for about 1 minute on medium speed. Once smooth, add the sugar on a medium speed and beat until fluffy and light in color. Mix in egg and vanilla. Scrape down the sides as needed.
Add the salt, baking powder, baking soda, cream of tartar, and mix until just incorporated. With the mixer running on low speed, slowly add the flour and mix until just combined. Mix in 1/2 cup sprinkles.
Using a cookie scoop, scoop dough (about 2 Tablespoons of dough each), roll into balls, and place on a baking sheet lined with parchment paper. Add a few more sprinkles on top of each ball dough.
Bake for 12 minutes, being careful not to over-bake. The cookies will appear very soft in the centers. Allow the cookies to cool on the cookie sheets.
