The Italian Job Recipe
1/2 lb Hot Italian Sausage (divided into 75 gram balls)
1/2 lb 80/20 dry aged ground beef (divided into 75 gram balls)
3 slices of Mozzarella cheese (cut into quarters and divided into 3 stacks)
9 slices of pepperoni (more if desired)
1t oil (vegetable, canola, safflower, or peanut)
1/2 c green bell pepper, stemmed, seeded, and cut into 1/4 lnch strips
1/2 c onion, peeled, halved, and cut into 1/4 inch strips
1/2 c Marinara sauce
Grated Parmesan cheese
Kosher Salt and coarse grind black pepper
Bakery fresh hamburger bun
Instructions:
1. Using a 4-5inch biscuit ring, place one hot Italian sausage ball in the ring and flatten with the palm of your hand
2. Place one cheese stack in the middle of the sausage and press lightly into the meat
3. Place 3 (or more) slices of pepperoni on top of the cheese
4. Flatten a beef ball gently between your palms then place over the pepperoni
5. Press meat to cover the cheese and create a sealed edge of meat around the cheese and pepperoni, being careful not to over work the meat
6. Preheat a thick bottomed pan or cast iron skillet to medium high
7. Toast buns and set them aside
8. Add oil to the pan and sauté the peppers and onions for 4-7 minutes depending on desired doneness, set aside
9. Sprinkle salt and pepper on both sides of the patty and cook for 3-4 minutes on both sides or until desired doneness
10. Top each burger with peppers and onions, marinara, and some grated Parmesan cheese.
