Tomato & Cornbread Salad

3 lb tomatoes (preferably heirloom), seeded and medium diced
3 fresh peaches, pitted and medium diced
2 bell peppers (yellow and red), fire roasted, peeled, seeded and medium diced
1 small red onion, quartered lengthwise and thinly sliced crosswise
1/2-1 cup Kalamata or other brine-cured black olives, pitted and halved
3 mini cucumbers, halved lengthwise and cut into 1/4-inch slices
1/2 cup fresh basil leaves, thinly sliced
1/2 cup fresh mint leaves, thinly sliced
1/2 cup fresh flat-leaf parsley, roughly chopped
4 cups cornbread croutons

Dressing:
3 tablespoons red wine vinegar
2 tablespoons sherry vinegar
1 1/2 teaspoons kosher salt
1/4 teaspoon black pepper
3/4 cup extra-virgin olive oil
