Healthy Trail Mix Recipes

Harvest Trail Mix

Ingredients:

1 cup whole unsalted walnuts

1 cup unsalted pepitas

½ t pumpkin pie spice

½ t sea salt (omit if nuts/seeds are salted)

1 cup dried apricots

1 cup freeze dried apples

1 cup cinnamon Life cereal (or any low-sugar whole grain cereal)

Directions:

Add nuts to a dry large sauté pan. Turn heat to low-medium and allow nuts to warm. Sprinkle spices on and allow the oils in the nuts to absorb the spices. Watch that nuts do not get too brown (as soon as you smell them, pull them off the heat). Add the nuts to a large mixing bowl and allow to cool. Add remaining ingredients and mix to combine. You can serve at a party as a snack or divide equally into ten individual ½ cup portions and put into snack baggies. These are perfect to throw into a bag or purse and eaten at any time. Plus, they are healthier and more affordable than most protein bars. These will keep at room temperature for up to 2 weeks.

Celebration Trail Mix

Ingredients:

2 cups whole unshelled unsalted pistachios

½ t cardamom

½ t sea salt (omit if nuts/seeds are salted)

2 cups dried cherries

1 cup dark chocolate chips (at least 60% cocoa)

Directions:

Add nuts to a dry large sauté pan. Turn heat to low-medium and allow nuts to warm. Sprinkle spices and salt on and allow the oils in the nuts to absorb the spices. Watch that nuts do not get too brown (as soon as you smell them, pull them off the heat). Add the nuts to a large mixing bowl and allow to cool. Add remaining ingredients and mix to combine. You can serve at a party as a snack or divide equally into ten individual ½ cup portions and put into snack baggies.
