BREAKFAST IDEAS FROM THE KROGER KITCHEN

SANTA FE MUFFINS

INGREDIENTS:
4 eggs
1/4 c milk
2 T flour
2 c Simple Truth Organic Mexican Style Blend Shredded Cheese
1 (4-oz) can Kroger diced green chilies

DIRECTIONS:
Place eggs in a large bowl and beat with a wire whisk. Add milk and continue to beat. Sprinkle flour on top and beat to mix. Stir in shredded cheese and green chilies and mix completely. Divide muffin filling into 6 muffin tins which have been coated with vegetable spray. Bake muffins in a preheated 425F for 18-20 minutes or until muffins are set. Yield: 6 muffins.

HARVEST MUFFINS

INGREDIENTS:
2 1/4 c flour
1 1/4 c sugar
2 t baking soda
2 t cinnamon
1/2 t salt
2 c grated or finely chopped carrots
1/2-3/4 c Kroger raisins
1/2-3/4 c Simple Truth Organic Pecan Pieces
3 eggs
3/4 c Kroger applesauce
1/4 c Kroger canola oil
1 large apple, cored and shredded or finely chopped
2 t vanilla

DIRECTIONS:
Combine flour, sugar, soda, cinnamon and salt in a large mixing bowl. Stir in carrots, raisins and pecans. In a separate bowl mix eggs, applesauce, oil, apple and vanilla; add to flour mixture. Stir only enough to combine. Spoon muffin mixture into muffin tins which have been coated with vegetable spray. Bake in a preheated 350F oven for 18-20 minutes or until muffins test done. Yield: 18 muffins (may be frozen in airtight container)

MINI BREAKFAST PIZZAS

INGREDIENTS:
4 Kroger English muffins, split
1/2 c Kroger pizza sauce
1/4 c chopped vegetables such as green pepper, onions, sliced mushrooms
8 thin slices ham, Canadian bacon or several pepperoni slices
8 fried eggs (prepared in a Teflon skillet coated with vegetable spray)
8 (3-4-inch) slices mozzarella cheese (cut in half on diagonal if desired)

DIRECTIONS:
Place muffins on a baking sheet and bake in a preheated 425F oven for 5-7 minutes. Remove from oven and top each muffin half with pizza sauce, vegetables, ham, egg and cheese. Return to oven and bake for another 8-10 minutes or until melted and bubbly. Yield: 4 servings
