Simple Strawberry Ice Cream (No Ice Cream Freezer Needed)
2 Qt. Strawberries
1 Cup Sugar
½ Cup Heavy Cream
Cut Strawberries up and layer on a cookie sheet and place in freezer for 15 to 20 minutes. Put all ingredients in a food processor and mix well. Freeze for 2 hours or until firm, stirring every 30 minutes. Enjoy!
Strawberry Ice Cream Pie or Parfaits
1 ½ Cup (15) Pecan Sandie Cookies
¼ Cup Melted Butter
¼ Cup Melted White Chocolate Chips
3 cups Vanilla Ice Cream, softened
3 Cups Simple Strawberry Ice Cream
Crush Cookies then mix in melted butter and white chocolate chips. Press this mixture in the bottom of a pie plate. Layer ½ of the vanilla ice cream, all of the strawberry ice cream and the spread the remaining vanilla ice cream over the top. Freeze to serve later. Makes Beautiful Parfaits!
Garnish:
I like to garnish this pie with either Chocolate covered Strawberries or Strawberry Freezer Preserves and then a few sliced strawberries.
Strawberry Freezer Jam
2 cups crushed Strawberries
4 cups sugar
1 box Sure- Jell
3/4 cup Water
Mix strawberries with sugar. Let stand 10 minutes. Meanwhile, stir the sure- jell into the water. Bring to a boil. Pour water mix into the strawberries. Allow to stand for 3 minutes before pouring into jars
Leave jars on counter top for 24 hours. Then place in freezer to enjoy later.
