David Andrews from D’Andrews Bakery & Café made Snowman Macarons. D'Andrews Bakery & Cafe offers a wide selection of baked goodies, including holiday cookies and pies. They will resume offering baking classes after the holidays that will include; Macarons 101, Croissants 101 and Brioche 101. The next "D'Andrews After Dark Dinner" is scheduled for Friday, January 10th. It's a popular monthly 5-course meal that David prepares for 15 people after the bakery closes for the day. D’ANDREWS SNOWMAN MACARONS

Macarons Yield 80 shells = 40 macarons

INGREDIENTS:

7 each Egg Whites
3 cups Super Fine Sugar
6 each Egg Whites
4 1/2 cups – Confectioners’ Sugar
5 1/2 cups Extra Fine Almond Flour
1 tsp Salt

DIRECTIONS:

1. Whisk the 1st Egg whites in the Kitchen Aid
2. After 1 min, when the foam appears, start adding sugar
3. Slowly add sugar in frequent additions
4. Whisk to firm peaks
5. Combine and sift Confectioners’ Sugar and Almond Flour
6. Add 2nd Egg Whites to Dry Ingredients
7. When stiff peaks achieved, fold in Egg Whites to dry- in 3 additions
8. Pipe using large round tip
9. Let sit for 45 minutes
10. Set oven to 325 degrees. Put in macarons. Turn down oven to 315 degrees. Bake 9-10 min
