End of Summer Salad: Warm Tortellini, Roasted Corn, Grape Tomato & Arugula Salad
Yield: 4 Salads
2 9-oz pkg fresh cheese tortellini
2 ears of corn, roasted and cut from the cob
4 oz cherry or grape tomatoes
1 c basil leaves, torn - reserve a few for garnish
8 slices thick cut bacon, cut crosswise into 1/2-inch pieces
4 c packed trimmed arugula
1/4 c thinly sliced red onion
3 T white balsamic venigar
1 T extra-virgin olive oil
1/4 t red pepper flakes
1/2 c shredded parmesan cheese
1/4 c roasted pine nuts
1. Grill two ears of corn on grill. Cut the corn from the cob.
2. Cook the pasta according to the package directions, leaving out salt and fat; drain.
3. While pasta cooks, combine pepper, oil and balsamic vinegar in a large bowl with a whisk. Toss in pasta. Toss in arugula and basil, then top with tomatoes, red onion, bacon, pine nuts and grated parmesan cheese.
4. Garnish with remaining basil.
