Summer Peach Caprese Salad
4 servings
2 each white chilled peaches
2 each yellow chilled peaches
2 each 4 ounce fresh mozzarella balls
10 fresh basil leaves, cut 6 of the 10 into thin strips and leave 4 whole for garnish
4 each strawberries, finely diced
1 tsp smoked sea salt
1 1/4 cup of balsamic reduction (recipe below)
Cut peaches and mozzarella balls into wedges. Alternating the yellow peaches, white peaches and mozzarella balls create a circle on the plate. Sprinkle basil and strawberries on top. Drizzle with balsamic reduction. Garnish with sea salt and fresh basil.
Balsamic Reduction
Yield: 1/2 cup
1 cup of balsamic vinegar
1 Tbsp of honey or maple syrup
Add the balsamic vinegar and honey or syrup to a small pot. Bring it to a boil, then reduce the heat and simmer for 10 to 15 minutes. Use immediately or store in a sealed container under refrigeration.
