Carne Asada Tacos from Las Brisas Mexican Restaurant

Carne Asada Tacos

­­­­­­­­­­­­­­½ lb skirt steak, diced

2T orange juice

2 T fresh lemon juice

1 t Knorr beef stock base (it’s a powder)

¼ c enchilada sauce

¼ c onion, chopped

¼ c tomato, chopped

3 T bacon fat

Diced onion and cilantro for garnish

Instructions:

1. Marinate Steak with orange juice, fresh lemon juice and beef stock for an hour or more.
2. In a medium skillet, melt pork lard and add onions and tomatoes, cook until onions are light brown.
3. Add marinated skirt steak, additional beef stock base and enchilada sauce,  and cook together for 3-4 minutes.

4. Garnish with more diced onions and cilantro, serve in a warm corn tortilla.
