CHERRY TOMATO COVERED DISH SALAD
Makes 6 servings

3 cups chicken or vegetable stock
1 1/2 cups couscous
1 tablespoon olive oil
2 cups cherry tomatoes
2 garlic cloves, minced
1 shallot, peeled and minced
1 tablespoon chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon black pepper

In a large saucepan over medium-high heat, bring the stock to a boil. Stir In the couscous. Cover and set aside 5 minutes or until all the liquid is absorbed.

Meanwhile, heat the oil in a large skillet over medium-high heat. Add the tomatoes, garlic and shallots. Saute 3 minutes or until the tomatoes begin to soften. Stir in the basil, salt and pepper.

Add to the couscous and toss to mix. Adjust the salt and pepper if necessary. Serve warm, at room temperature, or cold.
