Banana Pudding Cheesecake Pie

1 premade large graham cracker crust (2 extra servings size)

  1. 8oz pkg cream cheese, softened

½ cup sugar 2 eggs
3.4 oz box banana cream instant pudding
15 vanilla wafers, broken into pieces
Garnish: banana slices & whipped cream

  1. Preheat oven to 300 degrees
  1. In the bowl of a stand mixer (or handheld mixer), combine cream cheese and sugar until smooth.
  1. Add the eggs and mix until combined
  1. Add the pkg of pudding to the cream cheese mixture; scrape down the sides of mixing bowl, if necessary
  1. Mix until combined; batter will be thick
  1. Break vanilla wafers in halves or quarters; you want them chunky so they will be visible when you cut into pie
  1. Gently fold the broken wafers into the batter.
  1. Spread batter into graham cracker crust
  1. Bake in oven approximately 50 minutes; it will be puffy when you first take it out of the oven, but will settle as it cools
  1. Allow cheesecake to cool for several hours in fridge before serving
  1. Garnish with slices of banana and whole vanilla wafers
